Macaron Recipe

Being home for the summer has given so much time to get back into the kitchen! I love to bake and try new recipes and my family seems to appreciate all the sweets I've been making (it's a win-win for everyone!). I decided to try my hand at making macarons after coming across the most adorable baking blog! I adapted her recipe and decided to make a coffee flavored filling instead! The results were good - although nothing like Laduree's famous macarons - and I would definitely use this recipe again and switch up the flavor of the filling! 

Macaron Shells

  • 1 1/2 cups powdered sugar
  • 1 cup +1 tbs almond flour
  • 3 egg whites
  • 1/2 cup sugar
  • Food coloring

for the shells: 
  1. Preheat oven to 325 degrees. 
  2. Prepare a pipping bag with a round tip. Line a baking sheet with parchment paper. 
  3. In a medium bowl, sift almond flour and powdered sugar together. Set aside. 
  4. In a stand mixer with a whisk attachment, beat egg whites on high speed until they form soft peaks. 
  5. Lower the mixer's speed to medium and add sugar. 
  6. Put mixer back on the highest speed and beat until they form stiff peaks. 
  7. With the mixer still on high speed, add food coloring a few drops at a time until you get desired color. 
  8. Take bowl off of mixer and add almond flour/sugar mixture. 
  9. Using a rubber spatula, aggressively fold in dry ingredients until the batter starts to loosen and becomes a little runny. To test if the batter is ready, lift a small amount of batter from the bowl and drop it back into the batter. If it does nothing, keep mixing. If it slowly melts back into the batter after 20-30 seconds, it is ready. 
  10. Put batter (about 1/3 of the mixture) into prepared pipping bag and cover the rest.
  11. Pipe circles on prepared baking sheet and firmly tap the bottom of the tray so the batter flattens out. 
  12. Repeat with remaining batter.
  13. Let them rest for 30-45 minutes until they form a skin. 
  14. Bake for 10-12 minutes, or until they are set. 
  15. Let cool before peeling them off parchment paper. 
Coffee Filling

  • ½ cup powdered sugar
  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon coffee liqueur (I used Kahlua)

for the filling:
  1. Beat all ingredients together until you have a smooth cream.
  2. Match the macarons into pairs by size.
  3. Put a dollop of buttercream on one shell and fit a second shell on top.

Bloom Voxbox

I recently receivd the Bloom Voxbox in the mail filled with tons of  great goodies to try out and review! I wasn't sure what to expect because you don't know what going to be inside. I was so pleasantly surprised because all the products were from brands that I've used and loved. 

Here is what I thought of the products:
  1. Secret Outlast Xtend : The only criteria I have for a good deodorant is that it lasts all day and smells good. I have been using Secret for years and the Outlast version met all my requirements and did not disappoint! 
  2. Not Your Mother's 'Plump For Joy' - I love Not Your Mother's dry shampoo so I was so excited to try this! My hair is naturally straight and I am always looking for ways to add some volume. My sister and I both loved this product!
  3. Sinful Shine Nail Polish - This pink just screams summer to me! I tested this out and the formula went on smooth with full coverage after two coats.
  4. Nuxe Body Oil - At first I had no clue what this was for but after a bit of researching I found out that it has multiple purposes. I have yet to try it in my hair but I did use it after showering and it left my skin so soft and with a delicious, yet subtle, scent.
  5. Cute Nail Polish Pads - What an ingenious product. Essentially its just a cotton ball and nail polish remover but it does all the work for you! I totally recommend. 
  6. Sunbelt Bakery - This was a new product to me but one that I'm glad I was introduced to! So yummy!

Summer in White

The sun *finally*  decided to come out after a week of dreary, cold weather so my sister and I decided to shoot one of my favorite outfits for this time of the year! There is something so simple yet put together about a white dress and a denim jacket. This dress has so much detail in the upper body and the bottom is so flowy and just fun to wear! I wore it for a casual weekend look with a pair of easy slip on sandals and a wide brim hat but it can easily dressed up with a pair of heels.

Weekend Sales

Happy Weekend everyone! So I have officially been home from school for one week and it's pretty safe to say that I've adjusted to life at home again (praise the Lord for home cooked meals)! I got to see my bestie who came from England, spend time in the kitchen cooking and baking for my family, get back to work, and basically have nothing to stress about! It's been raining literally everyday since I've been home, I think I forget what sunshine feels like, but I've been taking advantage of that by cooking, unpacking, and blogging. The forecast doesn't look too cheery for this weekend either so I'll take that as an excuse to do a little bit of online shopping  browsing (even though I just got these super comfy/cute sandals from the boutique I work at). Downtown with Mod&Soul

One of my favorite things since starting college has to be all the new people I've met and formed connections with. I never thought I would go to college far from home, let alone out of state but over this past year I have quickly fallen in love with Richmond, VA and the people in it. Something that totally surprised me was the amount of bloggers that I would meet, I mean there are four of us just in my business fraternity and I have found so many more through social media and networking!

I came across the brand Mod & Soul on Instagram and was pleasantly surprised to find that it was based out of Richmond, Va. The brand was also opening their first storefront right Downtown! I got in contact with the store and I made a visit with a fellow blogger/bestie Meredith! We found out that the whole company was started by just one woman out of her home and has now turned into a full scale online store with a beautiful new store! The store is right in the heart of Richmond and has very on trend pieces and accessories, great basics, and products made by local companies. I fell in love with this romper because it is so comfy and the off the shoulder look makes it feel a bit more dressy than it is! I also left with this top and have already gotten so much wear out of it!

Mother's Day Gift Ideas

 With the semester ending, having to move out of my dorm and back home, and having to re-adjust to a new lifestyle, Mother's Day totally snuck up on me! In my opinion, Moms are so hard to shop for. At least for me she always says she doesn't want anything.  But, she does loves flowers and has been (not so) casually hinting on the kinds she wants planted for her.
